The Combisteel Base 700 convection oven with steam injection ref. 7543-0015 combines forced convection and steam delivery to produce both successful viennoiserie and gratins. Temperature range +50/+250 °C, double glazing, interior lighting, 430 stainless steel cavity and rotary-knob control. Steam injection preserves the softness of leavened doughs and the crispness of crusts.
4 pairs of rails spaced 75 mm apart accept 430x325 mm trays, for 55 L useful capacity. Dimensions 575x605x501 mm WxDxH, 230 V / 50 Hz plug-and-play connection (1300 mm cord), total power 2.9 kW.
