A convection oven cooks with dry fan-forced heat (ideal for pastries, snacking, roasts); a combi oven adds adjustable steam to cook at low temperature, regenerate and bake. The combi costs 2-3× more.
Rule of thumb: one GN 1/1 level per 12-15 covers per service. A snack aims for 3-4 levels, a brasserie 6 levels, a 150-cover restaurant 10 levels.
